The beans are first hand picked and then soaked in a water bath for 72 hours after growers remove the outer skins and pulp. The water baths, or fermentation tanks, increase the beans' acidity level. In addition to their acidity, Ethiopia beans offer a smooth, spicy flavor that becomes heightened in the soaking process.
